Chocolate cupcakes

Have you ever tried baking cupcakes?
If so, you definitely agree with me that cupcakes are unique masterpieces of delicious taste and perfect frosting.

These chocolate cupcakes are easy to make and I guarantee you won’t have enough for every guest.

Just use this step by step guide and you’ll see.

Ingredients for the dough:

115g (1/2 cup) butter

60g (1/4 cup) chocolate (50% fat or more)

45 g (1/4 cup) cocoa

110 g (1 cup) all-purpose flour

1/2 teaspoon of baking soda 3/4 teaspoon baking powder

pinch of salt

2 eggs

100 g (7 tablespoons) granulated sugar

55 g (4 tablespoons) brown sugar

120 ml (1/2 cup) milk

Melt the butter and chocolate in a heatproof bowl
over boiling water and let cool to room temperature.

 

Preheat the oven to 180°C (350°F).
Mix the dry ingredients (flour, baking powder, baking
soda and salt) together in a bowl.

 

In another bowl, put the eggs and start mixing with
a hand mixer, adding granulated sugar and then brown sugar.
Mix until you have a nice foam. It takes about 7-10 minutes.

 

Add the butter and chocolate mixture. Then start adding flour
and milk alternately. Flour in 3 batches and milk in 2 batches.

 

With a scoop of ice cream, place in a cupcake pan lined
with cupcake paper and bake for 15-18 minutes.

 

Let cool in the pan for 5 minutes, then turn out onto a wire
rack it cool completely.

Decorate with buttercream or cream of your choice.

For the frosting you can use chocolate swiss meringue buttercream or this cream below:

Chocolate cream (prepare the base the day before):

300 g (1 1/3 cups) of whipping cream

130 g (3/4 cup) dark chocolate 55-60%

120 g (1/2 cup) of mascarpone

Chop the chocolate into small pieces and pour over the hot cream. Let stand for a while, then mix into a smooth emulsion. Blend until smooth using a hand blender.

 Leave to cool in the fridge for min. for 12 hours, ideally overnight.

When you want to decorate the cupcakes, add mascarpone to the cooled base and beat to a stiff cream. 

Whipp carefully and at a lower speed. All ingredients should have the same temperature.
