Coffee christmas cookies

I prepare different types of cookies for Christmas,

and coffee cookies are definitely one of them.

The delicate taste of coffee can be felt in every bite and

that is why it is so delicious.

I believe you will like it as much as I do.

Dough:

320 g all-purpose flour

200 g (3/4 cup) butter

1 egg

110 g confectioners sugar

1 vanilla sugar

1 teaspoon of ground coffee

 

Filling:

1,5 cups of swiss meringue cream

Shot of strong espresso

 

Icing:

white chocolate

whipping cream (at least 33% fat)

1 teaspoon groung coffee (optional)

Dark chocolate for decorating or decorations of your choice

Direction:

Preheat the oven to 350°F (180°C).

Sift the flour and sugar so that the flour throuw the sift.

Pour all the ingredients into a stand mixer and make a smooth dough.

Cover the dough with plastic cover and let it set in refrigerator .

for at least 2 hours, but better overnight.

 

Roll out thinly and cut out shapes of your choice.

Bake very short (6-7 minutes).

Let it cool completely.

 

Spread half of the baked, cooled cookies with the filling.

Cover with another cookies and form like a sandwich.

Let is set in refrigerator.

You can decorate the surface as desired with chocolate coating or other decorations.
