Double filled kolaczki

 
Kolaczki are very popular in my country.
You can fill them with almost everything you love.
We love poppy seed filling or soft cheese filling
and on top are the best plums or berries.

Ingrediences:

100 ml (1/2 cup)  milk

20 g (1 Tbsp) fresh yeast

250 g (1 ¾ cup) sifted all-purpose flour

pinch of salt

50 g (1/4 cup) of granulated sugar

lemon zest (optional)

1 egg

50 g (1/4 cup) softened unsalted butter

Directions:

First prepare the yeast. Mix the yeast, a teaspoon of granulated sugar and a little lukewarm milk, set aside in a warmer place and let the yeast rise

for about 10 minutes.

In a bowl mix flour, salt, sugar, egg, remaining milk, zest, butter and yeast. Make a pliable dough. I work the dough in a robot with a kneading hook,

which processes the dough beautifully.

If the dough is too sticky, add a little more flour. Sprinkle the surface of the dough with a little flour, cover with a towel and let it rise in a warm place. It takes

about 45-60 minutes.

BAKER TIP:

If you want to speed up the rising process, turn on the oven at 30°C (85°F)

and let the dough rise in the oven.

Meanwhile, prepare the filling and topping.

Soft cheese filling:

250 g soft cheese

1 egg

sugar to taste

1 teaspoon cornstarch or vanilla pudding (only to thicken the curd, if needed)

Mix all ingredients together and set aside.

 

Topping:

50 g semi-coarse flour

50g of granulated sugar

30 g of softened butter

Mix all the ingredients again and set aside.

Next, prepare jam or poppy seeds, eggs for coating the edges and a baking tray.

BAKER TIP:

If your jams are too runny, you can thicken them with grated gingerbread or boil them a little to boil off the excess water.

 

To finish the kolaczki::

Preheat the oven to 180°C (355°F).

Divide the risen dough into about 18-20 pieces. Press each piece into a patty.

Put a teaspoon of soft cheese mixture in the center, wrap it in a ball and put it on a baking sheet. Let it rise for a while longer (approx. 10 minutes), make a hole in the top and fill it with jam or poppy seeds mixture.

Brush the edges with beaten egg and sprinkle with topping.

Bake until golden brown for about 15-20 minutes.

After removing from the oven, you can still drizzle with warmed butter and rum, but it doesn’t have to be. This will add very nice aroma and delishes taste.

Let it cool, sprinkle with powdered sugar.
