Lemon curd

Ingredience:
105 g (½ cup) granulated sugar
3 large eggs
105 ml (½ cup) lemon juice
120 g (1/2 cup) butter

Method:
In a pot, mix eggs with sugar, add lemon juice and butter. Put on a stove and cook over a low heat until curd starts to form. It is important to mix everything well. Once we have finished the pudding, strain it through a fine sieve so that there are no pieces left in the pudding. Cover with food foil, place directly on the pudding and let cool.

LEMON CURD prepared in this way can be used as a flavoring cream for various desserts or to fill cupcakes or cakes.
