Pistachio cheesecake

As I mentioned before, I love pistachios and pistachio cakes, desserts and everything what is made with pistachios.

This cheesecake is full of pistachios. Look how easy is to made this pistachio cheesecake.

For the base you need just 4 ingredieces:

200 g (3/4 cup) bisquit cracker

63 g (1/2 cup) pistachio flour (grounded unsalted pistachios)

85 g (6 tbsp) unsalted melted butter

37 g (3 tbps) granulated sugar

Instructions:

Place the crackers in a food processor and process to obtain fine crumbs.

In the bowl, mix together grounded crackers, pistachio flour, melted butter and sugar. Mix it well and place it in to the pan and make the bottom and sides crust.

Place it in the fridge to chill and prepare cheesecake mass.

Pistachio cheesecake batter:

900 g (4 x 8 oz.) cream cheese (room temperature)

250 g (1 1/4 cup) granulated sugar

110 g (1/2 cup) sour cream

140 g (1/2 cup) pistachio paste

1 tbsp vanilla extract

4 large eggs (room temperature)

Mix room temperature cream cheese and sugar until smooth. Stir in the sour cream and pistachio paste and mix again until smooth.


To avoid introducing too much air into the dough,

use a mixer set on low speed.

To avoid lumps, make sure the cream cheese is softened and

at room temperature.


Add eggs one at a time and mix again until well incorporated on low speed.

DO NOT overmix to avoid over-whipping.
If you overbeat the batter, the chessecake will crack in the oven.


Place in an oven preheated to 150°C (325°F) and bake in a water bath for 60-70 minutes.
Place on a wire rack and let cool completely.

White chocolate ganache – pistachio flavor:
120 g (3/4 cup) chopped white chocolate
60 ml (1/4 cup) heavy cream
45 g (3 tbsp) pistachio paste

Bring the heavy cream to boil.

Pour over the chopped white chocolate and pistachio paste. Mix until nice and smooth. Use hand blender if there are any lumps.

Cover with food foil and let it cool in the room temperature.

Use after 1-2 hour or place in the frindge.

Take the ganache out about 1 hour begore using it.

You can also do whipped ganache just use hand mixer and blend it about 2-3 minutes.

 

And you can decorate your cheesecake according to your imagination.
