This yeast cake has the same dought, filling and topping like Double filled kolaczki.
I love this dought. It is easy to make even if it looks complicated.
But sometimes I’m a little bit lazy and I don’t make small kolaczki,
but I put them on a big tray and make a yeast cake,
which tastes the same as the small kolaczki.

Here is the full recipe:
Ingrediences:
100 ml (1/2 cup) milk
20 g (1 Tbsp) fresh yeast
250 g (1 ¾ cup) sifted all-purpose flour
pinch of salt
50 g (1/4 cup) of granulated sugar
lemon zest (optional)
1 egg
50 g (1/4 cup) softened unsalted butter
Soft cheese filling:
250 g soft cheese
1 egg
sugar to taste
1 teaspoon cornstarch or vanilla pudding (only to thicken the curd, if needed)
Mix all ingredients together and set aside.
Topping:
50 g semi-coarse flour
50g of granulated sugar
30 g of softened butter
Mix all the ingredients again and set aside.
Directions is the same:
First prepare the yeast. Mix the yeast, a teaspoon of granulated sugar and a little lukewarm milk, set aside in a warmer place and let the yeast rise
for about 10 minutes.
In a bowl mix flour, salt, sugar, egg, remaining milk, zest, butter and yeast. Make a pliable dough. I work the dough in a robot with a kneading hook,
which processes the dough beautifully.
If the dough is too sticky, add a little more flour. Sprinkle the surface of the dough with a little flour, cover with a towel and let it rise in a warm place. It takes
about 45-60 minutes.
To finish the yeast cake, transfer rinsed dought on the baking sheet in baking tray. Roll out the dought on full tray, put soft cheese filling on the dought, place fruit of your choice, sprinkle topping and bake the cake in the oven on 360°F (180°C) for 30-35 minutes or until golden brown.
